We give you some of the dishes that are traditionally prepared during these months:
Grinded corn, onion and basil; everything wrapped into the same leaf that covers the corn, tied and then put into boiling water. This is the traditional recipe for this dish that takes over the tables during the summer in Chile. How do you prefer it? Salty and with tomatoes? Or with a little bit of sugar on top?
Corn season does not go unnoticed in the Chilean kitchens. Its base is made of pino (seasoned meat with onions) and chicken, the mixture is then covered with a paste made of grinded corn, and finally taken into the oven. An irresistible dish.
It’s impossible to make a list of summer dishes and not to include “porotos granados”. This is the perfect time for the harvesting of beans, which are taken out of their skin and then put directly to the pot. They are later accompanied by “pilco” or “mazamorra” (corn kernel or grinded corn respectively). A dish that owes its origin from the countryside tradition. Let’s not forget to put some “pebre” on the side, or a tomato salad.
Restaurants located on different small towns and cities next to the beach welcome thousands of visitors during summer, and among the most popular dishes we can definitely mention the fried fish. Whether you eat it with salad on the side, mash potatoes or rice, it’s up to you.
A combination of this wheat cereal with dehydrated peach’s juice, also known as “huesillo”; this is the recipe for one of the most traditional desserts in Chile. The secret is to always have it cold in order to achieve that refreshing effect. The ideal drink for those hot summer days.
Whether it is in a fruit-salad or by itself, watermelon is without a doubt one of the most anticipated fruits of the summer. Refreshing and delicious, the further along we get into summer, the easier it is to find some good watermelon.
