Pastelería Mapuche Liwen

Angel Joseate launched the Mapuche bakery Liwen one year ago, and the place has become famous for creating delicious treats with traditional Mapuche ingredients. Angel’s signature dessert is his torta de piñón, a cake made with pine tree flour from the south of Chile, syrup of murtilla (a native Chilean shrub), fresh cream, and fruit from Chile’s famous Araucaria tree.

“These pastries are prepared not too sweet, without chemicals, and with fewer calories,” Joseate told La Tercera.

In addition to the bakery in Peñalolén, torta de piñón is available by the slice at three coffee shops in Santiago, including Café del Autor on Manuel Montt, Emporio Vergel on Av. Italia, and El Callejón de Mesías on Lastarria.

Banqueteria Calfucura

Since 2008, José Luis Calfucura (also known as the “mapuchef”) has been creating a gourmet Mapuche restaurant every weekend in the garden of his home in Cerrillos. Calfucura is known to prepare “charkikán”, a smoked mussels dish, ribs in his clay oven, and much, much more.

The restaurant is open every Sunday on a first-come-first-served basis.

«We don’t work with reservations, just come, it’s like going to a friend’s house, it’s that simple,» Calfucura told La Tercera.

Mapunyague Comida Mapuche

You can even order tradition Mapuche cuisine delivered to your door in Santiago! Carmen Caripán is the chef behind Mapunyague, a delivery-only business that prepares delicious handmade dishes. Highlights include the chawe, a quinoa salad with scallions and cilantro, yiwiñ kofke which are sopaipillas without the pumpkin, and chamkun mürke, which are flour buns toasted and mixed with honey.

Orders must be placed online three days in advance – a true testament to the high demand for traditional Mapuche cuisine in Chile’s capital.
